I bought a new toy!
It's a vegetable spiralizer and it's got all the Fergies in a right old spin*
*it really hasn't, but it is good!
I gave the spiral treatment to some courgette and sweet potato, and tried two methods of cooking them.
Method 1: Oven baked
Please excuse the bogging tray... But I popped these on some foil and seasoned with salt to help dry out the water, garlic and chilli flakes, and a little bit of EVOO.
Result:
They burn quick, so be vigilant. But they came out lovely and sweet and crunchy.
Method 2: Pan cooked
Tiny bit of oil, bit of seasoning, 5 mins or so...
Result: lovely and soft but with bite, you could add any sauce etc. I just served them with some mackerel but would like to try with some Parmesan.
